🌤Talk about magnificent weather! Has felt more like spring than winter in Taranaki the last two weeks 🌤
I have fallen off the wagon on here lately 😬 but this absolutely delicious quinoa bread from a very talented artisan baker in Hawera @bakedbyblanche 👨‍🍳has provided me inspiration! Warm with abit of Manuka honey from the farm it is 👌👌if you are local you can pick some up from the Hawera Saturday markets. Working with passionate, talented people is the best and this bread proves it!

✨Happy Matariki! ✨We love a bit of star gazing and it’s easy to do with the kids when it’s dark so early at the moment🌛
Here is a beautiful salad you could whip up for your whānau to celebrate this special time of year. Thanks to the very talented @crazy_cucumber_blog for this Cumin, Quinoa and Broccoli Salad with Yoghurt Dressing.

Toasted and freshly ground cumin seeds gives to this green salad a warm depth of the flavour. A low fat and refreshing dressing based on Greek yoghurt goes well with broccoli, quinoa and cumin. Acidic yoghurt is the secret weapon for flavours, it makes the taste richer and brings the balance to the dish.

Salad is a meal is a great way to hit “reset” after weekend. Additionally, this simple and satisfying salad can be done in less than 30 minutes.

INGREDIENTS
FOR QUINOA

1 cup white quinoa
1 Tbsp tamari
juice of 1/2 lemon
2 cups stock or water
For salad:
medium size broccoli, cut into florets
1 tsp toasted cumin seeds, ground in a mortar
1 tsp sumac
1/2 cup chopped coriander leaves
1/2 cup pomegranate seeds
Garlic yoghurt dressing
1/2 cup plain Greek yoghurt
splash of olive oil
1 garlic clove, grated
salt
freshly ground black pepper
lemon zest and juice
splash of water

DIRECTIONS

Quinoa. Rinse quinoa with cold water using a sieve until the water that comes through is clear. Place the quinoa in a saucepan with 2 cups of stock, lemon juice, and tamari. Let the quinoa boil two minutes, cover with a lid, then let it simmer 10-15 minutes until all the liquid is absorbed. Fluff with a fork and chill slightly. Set aside.
Put the broccoli florets into a steamer or colander set over a pan of boiling water. Cover with a lid and steam for about 3-5 minutes or until crisp-tender. Cool the broccoli slightly, then chop it roughly.
For garlic yoghurt dressing mix all ingredients in a mixing bowl using a whisk. Season with salt and freshly ground black pepper.
In a large mixing bowl, toss together the quinoa, broccoli, cumin seeds, coriander leaves, sumac, pomegranate seeds and the yoghurt dressing.
The salad can be served warm or chilled. Enjoy!

We are trying to decide between having a party on Sunday night or hiding in a cupboard until it's over! 🙈🙈😂
After having a film crew follow our family around for five days, they could make a show about just about anything!
Our 4 year old summed it up best -"mum wore her meeting clothes and nobody followed instructions" 🤣
We dont get to see to before it airs, so we will be watching it for the first time with those of you that tune in 📺 👍it should be entertaining!
