This is our favourite muffin recipe – and muffins are made a lot in our house!
You can’t beat quinoa for adding moisture to baking. The quinoa can be added to this recipe cold or still hot straight from a pot. Bulk cooking quinoa and freezing it is a great way to always have some on hand. However our quinoa takes less than 10 minutes to cook, so I put it on first and by the time I have mixed up everything else the quinoa is cooked and ready to be added.
1 cup flour
1 cup bran
1 teaspoon baking soda
2 teaspoons baking powder
1/2 cup sugar
1/2 cup sultanas (or chocolate chips)
Pinch of salt
2 tablespoons golden syrup
1 grated apple (or 1 cup of any type of fruit)
1/2 cup cooked quinoa
1 cup milk
Mix dry food ingredients. Add apple quinoa, syrup, egg and milk – mixture should be quite wet. Spoon into greased muffin tins. Bake at 190 for 15mins 👌😋
